Kefir bought at the store (commercial kefir) is quite different in composition, flavor and cost to the kefir made at home from genuine kefir grains. Authentic homemade kefir is made from kefir grains that ferment the milk at room temperature for about 24 hours. Commercial kefir is not made directly from kefir grains, but rather they are an imitation that mimics some of the strains, flavor and properties of authentic kefir that's been made at home for hundreds of years.

One of the reasons why companies cannot use authentic grains is that they are limited by the bottling process. Companies need to suppress or halt yeast activities in order to stop the continued carbonation found in genuine kefir or the bottles would likely explode. So ultimately, you have a suppressed product that is not as active, not as balanced and has much less variety of bacteria and yeast.

One of the leading commercial brands, Lifeway kefir, state that they have 10 strains of friendly microorganism. In comparison, kefir made at home with kefir grains can have up to around 40-60 different strains. Store bought or commercial kefir typically has more strains and more probiotics than yogurt, but still a far cry from what the genuine thing.

There are also kefir starter packets that are popular such as Body Ecology. Body Ecology claims 7 different strains of bacteria and can be used a limited number of times (around 7 times compared to kefir grains that never die). Kefir starter packets are also an imitation lacking the same probiotic contents, acid, carbonation, the kefiran (a health-promoting special polysaccharide formed by the grains), and many other natural healthy by-products that occur specifically during fermentation of the live grains.

One of the biggest advantages of doing kefir at home is the enormous savings. The cost of going through 2-3 store bought 32-oz kefir bottles a week is approximately 5-622 a year. The only cost associated with home-made kefir is the cost of the milk which comes out to around -8 for that same amount of kefir. The grains themselves are self-sustainable and will continue to grow and never die if well taken care of.

Another advantage of homemade kefir is that you get to choose the type of milk and flavorings (if any). You can try raw, non-fat, low-fat, whole or goats milk. You even experiment with soy, rice, coconut and almond milk. You can flavor it however you like or just drink it plain which is delicious by itself (without the added sugars many commercial companies put in).

Did you know that chocolate taken in moderate amounts has a good blood-thinning ability? Dark chocolates with rich amounts of flavonoids have a blood-thinning quality that prevents cardio-vascular problems.

Recent studies say that Dark chocolates reduce inflammation and are found to increase immune system health. The flavonoids in chocolate contain powerful anti-oxidants called flavanols and procyanidins which improve the flow and function of the blood.

You can substitute your diet with any of the following. Dark Chocolate Drinks, Chocolate Cookies, Chocolate Cakes, Chocolate Puddings, Chocolate Desserts etc.

You can add almonds, hazelnuts, oatmeal, and almond butter in limited quantities along with them and prepare many snacks that are found to be really healthy. Always try a dark cocoa mix with a tablespoon of protein powder added to it for creaminess instead of the regular milk chocolate mix.

Now let me give you two good recipes that I use often:

Ingredients are:

Dark Chocolate - 400 gm
Chopped walnuts and Almonds about ¼ cups.
Organic whole cream of about 200 ml.
A pack of multi-grain biscuits.

Heat the cream in a skillet. Now remove the skillet from fire once the cream comes to a boil. Now add dark chocolates to it. Keep stirring until the chocolate pieces melt into the cream. Add crushed biscuits, chopped walnuts and dry roasted almonds to this mix, coating them well. Pour out into a greased vessel or a waxed-paper laid dish and then refrigerate. Make slices as per your need and serve (eat).

How about a low fat and low cholesterol chocolate muffin? The ingredients are 2 cups of spelt flour, ½ cup packed light brown sugar, ¼ cup canola oil, ¼ cup butter, 1/3 cup buttermilk, 1 cup of mashed ripe bananas, 1/3 cup of dark chocolate chips, 1 egg white, 1 tsp vanilla, and some chopped walnuts, ground cinnamon and nutmeg to add to the flavor.

Preheat the oven to 350 deg F. Coat a 12 cup muffin pan with cooking oil.

Combine the flour with cinnamon and nutmeg along with a little baking powder and salt. Mix well.

Mix brown sugar, oil, low-fat butter, buttermilk, egg and vanilla. Beat the mixture with a blender for about 5 minutes. Now lower the speed of your blender and add the flour mix, keep mixing until it is fully combined. Then add your bananas, walnuts and chocolate chips.

Divide the mixture equally in the muffin cups to about two thirds of the cup full. Bake for 15 to 20 minutes until the muffin is completely done. Then allow it to stand for 5 minutes and remove from the pan. Your healthy low-fat chocolate and banana muffin is ready to eat.

Remember, you have to keep the quantities a little low. Though they are healthy, they still contain a good amount of calories.

Last night I made my first batch of raw almond ice cream. It satisfies vegans, raw-foodies, superfoodies, and junk-foodies alike! The premise behind this tasty treat is that almonds, when blended with water, make a smooth and creamy milk-like liquid. It's great in cereal or even in coffee, but also can be used in recipes where dairy products are called for. The trick is to be sure it is completely blended, (unless you like your "milk" chunky.) You can also strain the almond milk through cheesecloth or even a small strainer to eliminate any larger particles.

This delicious almond ice cream gives a fraction of the sugar and fat of real ice cream, contains the healthy omega fatty acids found in raw almonds, and can be flavored and added-to to  suit anyone's tastes. Be sure to send in any creative recipes that have proven a success for your family!

Raw Almond Ice Cream

2 Cups Raw Almonds

4-5 Cups Water

2 Bananas

Agave Nectar to taste

A Pinch of Sea Salt

2 tsp Pure Vanilla Extract

Blend together the almonds and the water. More water right be needed to get the best consistency. Blend until there are no large pieces left. I like to leave mine a little chunky, as I enjoy the nuttier texture of the ice cream. For perfectly smooth ice cream, however, strain through a cheesecloth. Set aside half of the almond milk.

Freeze the other half. The easiest way to do this is in ice cube trays, since it will go right back in the blender before eating. If not, freeze the almond milk in any container and just break it up before blending.

After it is frozen, return it to the blender and add the two bananas and vanilla extract. The agave nectar is used as a sweetener, but you can also use maple syrup if you don't have the nectar. Some people add chopped dates as a sweet alternative. Add a pinch of sea salt (sounds weird, but it really makes it taste better!) As you blend, add some of the almond milk you set aside earlier. Keep adding until you get the ice cream consistency you desire.

You can now add all sorts of fun toppings or additives like fresh fruit, cocoa powder, or chopped nuts. Go easy on sprinkles or chocolate syrup as they are high fat/cal, low nutrient.
